So roll up your sleeves and join us as we embark on a culinary adventure that will tantalize your taste buds and leave you craving more.

Creating the Cowboy Mayonnaise

  • Garlic and Citrus: Grate two cloves of garlic into the mayonnaise using a microplane. Add the zest of half a lemon and squeeze in the juice, straining out the seeds.
  • Kick of Spices: Introduce two teaspoons each of Dijon mustard and smoked paprika.
  • Herbal Freshness: Chop up 3 grams each of chives, dill, and flat-leaf parsley.
  • Final Touches: Season with Worcestershire sauce, salt, black pepper, and optional chili flakes. Mix thoroughly.

Preparing the Chicken

Coat four boneless, skinless chicken thighs with about a third of the prepared mayonnaise. Marinate for at least 30 minutes, or overnight.

Preheat your oven to 200°C (390°F). Line a baking tray with parchment paper, spraying it lightly with oil. Spread the chicken thighs on the tray with space between each piece. Bake for 16 to 17 minutes until the chicken is golden and cooked through.

Crafting the Slaw

  • Slice green cabbage into thin ribbons. Use half a cucumber, sliced into your preferred shape.
  • Chop 2 grams of parsley and dill. Optionally, slice one long red chili into thin rounds.
  • Mix one tablespoon of mayonnaise with a tablespoon of red wine vinegar and two teaspoons of light soy sauce. Add salt and pepper to taste.

Bringing the Sandwich Together

Lightly toast your bread. Spread the remaining cowboy mayonnaise over it, layer with the baked chicken thighs, and top with the slaw. Place the top piece of bread on the sandwich, pressing gently.

This Cowboy Mayonnaise Chicken Sandwich isn’t just a meal; it’s a sensory experience. The tangy mayo, juicy chicken, crisp slaw, and hint of chili create a harmonious symphony of flavors and textures. Enjoy each bite, knowing you’ve mastered a dish that balances simplicity with gourmet flair.
