Ingredients

  • 2 Bell peppers (red and yellow)
  • 2 Brown or yellow onions
  • 4 Spring onions or scallions
  • 800g or 1.7lb of beef or chicken
  • 5 cloves of garlic
  • 10g of ginger
  • 80ml of light soy sauce
  • 40ml or 40g of oyster sauce
  • 1/4 cup or 60ml of beef or chicken stock
  • 1 tablespoon or 10g of corn flour
  • 15 cracks of black pepper
  • 300g of jasmine rice
  • 500ml of cold water
  • Optional: 10g of coriander or cilantro, 1 long red chili

Instructions

Preparation:

Begin with your choice of bell peppers. Stand the pepper upright and slice around the core. Once cleaned, slice the peppers thinly for quick cooking. Prepare the onions by slicing them into thin, half-moon shapes. For the spring onions, separate the roots from the stems and thinly slice the stems for garnish. Freeze your protein for about 30 minutes for easier slicing, then slice against the grain for tenderness.

Sauce:

Create a paste with garlic and ginger using a microplane. Combine the paste with light soy sauce, oyster sauce, stock, and corn flour, adding cracked black pepper for taste. This sauce will bring the dish together.

Cooking the Rice:

Rinse the jasmine rice thoroughly. Use a ratio of 1.5 parts cold water to 1 part rice, cooking with a lid on for even steam distribution.

Stir Fry:

Heat a wok or large frying pan over high heat with neutral oil. Sear your protein in batches. Remove and sauté onions and bell peppers until they soften slightly. Return the protein, add spring onions and optional chili, and pour in the sauce to simmer until it thickens.

Serving:

Enhance jasmine rice with chopped coriander, serving it alongside the stir fry. Top with fresh garnishes like spring onions and sesame seeds. This stir fry can be stored in the fridge for up to three days or frozen for three months. Reheat and enjoy!
