Summery Chicken Stir-Fry

This delicious stir-fry recipe features three iconic summer vegetables — squash, eggplant, and peppers — that give it a seasonal kick. Packed with flavor and nutrients, this dish is a perfect way to enjoy the bounty of the summer season.

Ingredients:

  • Chicken breast, thinly sliced
  • Yellow squash, sliced
  • Eggplant, cubed
  • Red bell pepper, sliced
  • Green bell pepper, sliced
  • Onion, sliced
  • Garlic, minced
  • Soy sauce
  • Rice vinegar
  • Brown sugar
  • Cornstarch
  • Olive oil
  • Salt and pepper to taste

Start by marinating the sliced chicken in a mixture of soy sauce, rice vinegar, brown sugar, and cornstarch. In a hot wok or skillet, stir-fry the chicken until cooked through, then set aside. In the same pan, add a bit more olive oil and stir-fry the vegetables until they are tender-crisp. Add the garlic and stir-fry for another minute.

Return the cooked chicken to the pan and toss everything together. Season with salt and pepper to taste. Serve the summery chicken stir-fry hot over steamed rice or noodles for a complete meal.
